Boiled Eggs in a Steamer. Done in 30 minutes. Cooked to perfection. Plop in a bowl of ice water when done.

Awesome Vegetable Casserole Dish

Awesome Vegetable Casserole Dish

4 large tomatoes, thinly sliced
Mix the following “Vegetable Preparation” in a bowl.
2 green bell peppers, diced
1 large potato diced
2 small carrots finely sliced
1 onion chopped
1 zucchini quartered and sliced
3 Tablespoons chopped parsley

Mix the following in a bowl

1½ teaspoons salt
½ teaspoon pepper
½ cup water
½ cup oil
2 teaspoons balsamic vinegar
1 teaspoon Tabasco sauce (Or to your taste)

1 cup rice
1 cup sharp cheddar, shredded cheese (optional for vegans)


Oil a 9x12 casserole dish (I use EVO...Extra Virgin Olive Oil)

Put half the tomatoes down
Cover tomatoes with ½ the vegetable preparation
Sprinkle all the rice evenly over the vegetables
Cover with the other ½ of the vegetable preparation
Layer the rest of the tomatoes
Pour the liquid over the vegetables.
(Oil, salt, pepper, vinegar, water, and Tabasco sauce mixed together.)
Cover with foil.
Bake in oven at 325° for 2 hours.
Uncover, sprinkle with the cheese and bake uncovered until cheese melts.
