Pineapple Upside Down Cake












Cake batter:
1-   Pineapple box cake mix
3    eggs
1/2  cup applesauce (replaces oil)
1    cup water (part of it is the drained pineapple juice)
1    4oz pina colada yogurt
Mix for 2 minutes on medium.
Topping:
1    stick butter (or margarine if you must)
1    c. brown sugar (packed)
1    8oz can of crushed pineapple (drained into a measuring cup)
12   maraschino cherries (optional, but I love them)
Melt butter in the bottom of a 9X13 pan.
Sprinkle brown sugar over melted butter. Top with crushed pineapple and dot with cherries. Carefully pour cake mix batter over this.
Bake at 350 degrees for 30-35 minutes. Test. Cool 5 minutes. Turn over onto a plate, or into another 9X13 like I did.
